Delicious by itself, this is also a great accompaniment to soups, or as a bed for roasted tomatoes and bacon.
Roast garlic, ingredients:
1 or 2 heads of garlic
sea salt, to taste
olive oil, to drizzle
Preheat oven to 350° F. Break the garlic cloves out of the head. Toss the unpeeled cloves with olive oil and the sea salt. In an oven-proof roasting pan with lid, or in a little tent made out of tinfoil, roast in the oven until soft, about 25 minutes. Let cool slightly and peel by squeezing.
Toast, ingredients:
4 slices of rustic farm-style bread
olive oil, to drizzle
fleur de sel (or sea salt), to taste
freshly-ground black pepper, to taste
1 tablespoon finely-chopped parsley
Toast or (preferably) grill the bread, with a little olive oil. Spread the roast garlic over the top of one side of each piece of toast. Drizzle with olive oil and season with salt and pepper to taste. Serve immediately.
