Parmesan Crisps

Parmigiano-Reggiano baked in the oven until golden brown and crispy makes for a delicious and beautiful garnish, but also a killer snack—why have Parmesan-flavored crackers when you can have crackers made of Parmesan?

Makes 8 crisps.

Ingredients:

3/4 cup freshly-grated Parmigiano-Reggiano
ground cayenne pepper, to taste

Preheat oven to 350°F.

Place a silicon baking mat in a half baking sheet. Place a 1.5 tablespoon mound of Parmigiano-Reggiano on the baking sheet. Flatten the mound into a 1/4" thick disc. Continue with the remaining Parmigiano-Reggiano, separating the mounds by at least an inch.

Place in the oven and bake until golden brown and crisp but not blackened, 8-9 minutes. Remove from oven.

Great as a soup garnish, or a snack

Dust with cayenne pepper. Let cool 2-3 minutes. Using a rubber spatula, remove the crisps from the baking sheet. Store gently in an airtight container for up to 2 days.
